The Shred...cont.

Okay, so I'm fixing to start Level 2 of Jillian Michaels "Shred" program. I've been going strong now for the past 10-12 days. My goal is to do each level for 10 days. I missed the last two days on Level 1 so I had to make up for it...that's why it was 10-12 days. I just now got some hand weights. I've been using random things around the house for weights...water bottles, cans of soup, etc. So now that I have weights - BIG difference! Probably should've waited to start until I got those! I'm totally going to die on Level 2 using them since I'm not used to them. Oh well, wish me luck!

Yeah, totally killed me. There's exercises she does I've never even seen or heard of before. And I'm pretty sure I'm doing everything right but the side of my left foot is hurting me from doing so many damn jumping jacks and my left knee is really killing me too. I swear, I think she says about a million times, "make sure your at a 90 degree w/those knees...don't wanna get hurt." I watch my reflection in the TV and I go a little slower than they do to ensure I'm doing it right but it seriously hurts my knee to even get up from just a sitting position. :(

Mexican Chicken

Okay, so I'm no "Pioneer Woman" or anything but I wanted to share a really yummy quick & easy recipe with you guys. It's called Mexican Chicken and it's low fat, low carb, and it has lots of protein. Here's a pic of the after product:


Ingredients:
2-4 chicken breasts (depends on how many people are eating; I used 2 b/c it was just me & Lindsey)
1 packet of taco seasoning (you can use the kind for chicken or the kind that's low sodium)
Black Beans - 1 can
4 Tbs of Butter (you can Margarine or Smart Balance or whatever)
1 Avocado
2-4 slices of Pepper Jack Cheese

Directions:
Cut chicken breasts into cubes. Heat butter in non-stick skillet until completely melted and add taco seasoning at that point kind of making a paste. Stir in chicken and coat each piece evenly. Cook uncovered on med heat stirring occasionally. I added garlic salt and cayenne pepper to mine for a little spice. While chicken is cooking cook beans and slice up avocado. Once beans are bubbling and chicken is cooked on all sides (I usually cook mine for about 10-15 min)...take beans and pour onto plate and then top w/chicken and then lay a few slices of pepper jack cheese ontop of the chicken and let that sit for a few seconds and melt and then top w/avocado or jalapenos or whatever else you might want to add (lettuce, tomatoes, etc) and ENJOY!

Kroak has officially croaked.
Kennedy HHHHAAADDD to have this fish and of course she hasn't paid a lick of attention to it since day one. Kingsley loved him though. He always made me pick him up so he could watch him eat every time I fed him. This darn fish lived forever. I think he was at least a couple years old. I was sure with a name like "Kroak" that he would die the next day after we got him, but he didn't! Kennedy named him and I have no idea where she got that name from??? So rest in peace our little fishy, we will miss you...at least Kingsley will.

Weekend Rewind

This weekend was an absolute mess of a weekend. NOTHING went as planned except for our family pics that we took on Saturday. We were originally invited to Genghis Grill for a dinner date w/our Friends Kambrie & Travis (Dear Memphis blog), but we couldn't find a sitter so then we decided to have "boy" & "girl" night. Lindsey was going to hang w/Elvis and Kennedy and I were going to go get our nails done and then go over to my friend Leanne's (Soup Du Jour blog) house for her Willowhouse Party. Yeah, that didn't happen either. So after I got off at 4 on Friday I did my Shred and then I went and tanned and after I was done tanning I had a text from Lindsey saying that E was walking around the house saying, "Sissy, Sissy, Sissy..." So I felt kind of bad b/c the Friday's we get Kennedy back are always our "Family Friday's." So instead of going straight from tanning to pick her up and over to get our nails done and then to Leanne's...I went back to the house & picked up Lindsey & E and went all went and picked up Sissy! :) The boys had originally planned to go out to Rowlett to BeBe's & Pop's to pick up Lindsey's bike and stuff b/c he was going to go ride early Saturday so we still went ahead and did that and stopped in Richardson at Chili Gordo's and had some Mexican food on the way. So that pretty much sums up Friday...lots of driving.
Saturday Lindsey got up early and headed out to Village Creek MX to ride and the kiddos and I stayed home to get everything ready for our pics that evening. And let me tell you...running errands all day w/a 2 & 4yr old is not easy. We pretty much left right after Lindsey did...we got up, got dressed, and headed out to find outfits for everyone and then we went and had lunch at McDonald's and the kids played for a little while and then we went and got everyone's hair cut. After the hair cut it was nap time and while they napped I got dressed and painted my nails (since I didn't get my mani & pedi on Friday...boooooo) and stuff and by that time Lindsey was home & unloaded & getting ready himself. We met his cousin Chris & his wife Gina and their two kids at Central Park in Frisco around 6 or so. Gina was doing our pics for us....she's an up & coming photographer so she was practicing on us! :) Earlier in the day it was super hot so I had us all dressed in dresses and tanks and by the time we got out there and got started it was super windy and everyone was freezing! But I still think the pics will turn out good! Afterward we took them out to eat as a thank you b/c Gina wouldn't let us pay her! We went to this little hole in the wall place called Joe's Pizza & Pasta or something like that over here in Frisco at the Tollway & Warren. It was a good dinner considering we were trying to wrangle 2 4yr olds, a 2 yr old, & a 6yr old all while trying to eat & converse at the same time! After din we drove back out to Rowlett to drop the kids off b/c we were going to a party in Royse City for my cousin Stephen's 21st bday & my friend KC's 24th bday. Seriously, I feel like all I did was drive all weekend, ugh. We actually had plans to meet up w/more friends after that party, but we were so beat from everything we had done all weekend so far that we just went back to Lindsey's parents and stayed the night there. We slept in and his Mom made a HUGE deeelicious breakfast and then we packed up and headed home and pretty much cleaned for the rest of the day. We were actually supposed to go back over there for din and grill out but the weather was awful so we ended up staying home and ordering some Wingstop and watching a movie.
Yeah, so this weekend I ate like total crap, but I didn't have a choice...it was like go, go, go all weekend long! And I'm really disappointed b/c I was only able to do my Shred on Friday. :( I haven't missed a single day yet up until this weekend. Totally going to have to make up for it this week. And sorry, I don't have any pics from this weekend either. I may be able to get a sneak pics of our family pics from Gina soon and I'm waiting on some pics from the party, so as soon as I get those I'll post them.
Hope everyone had a good weekend and hopefully it wasn't as busy as mine and maybe a bit more relaxing!

New Do

Finally! OMG! It's been ages since I've had my hair professionally done. I was so bummed w/my hair I can't even remember the last time that I actually brushed it and it even got to the point where I was using Lindsey's shampoo (if and when I washed it); he uses Head & Shoulders or some Pantene 2 & 1 Curly or something like that... I don't have dandruff and I don't have curly hair, but I really didn't care. It was pretty bad and I was like I have to do something immediately. Plus, we're having family pics done on Saturday and there was no way I was taking pics w/the rat nest I had. So anyway, my awesome hairdresser Kelsey came to my aid! I love her! She doesn't make me come to the salon b/c she knows it's hard for me to get out w/the kiddos. But if you guys would like to visit her she works at the Williams Edge Salon in Las Colinas (www.williamedge.com) and she also does hair pieces and photography (kelseydeardesigns.wordpress.com). Here's some pics and please ignore the fact that my eyes are half way open and my shirt is inside out. I took these this morning first thing when I got up b/c we didn't finish until like 11 last night.

Poor Kennedy still doesn't have her own room..well, she almost did. We moved into a 3 bedroom w/the intention of giving her her own room, but I had still steal it from her and make it my office for various reasons. It's okay though because her and E love sharing a room! But she's starting school this year and she's getting older and I think it's time! I would LOVE this room for her and I know she would love it too...the bed is adorable:

Weekend Rewind

Okay, so I have a *HUGE* weekend rewind to do! Let's start w/Friday...If you read my blog you'll of read a review about a new Mexican Restaurant right by my house called Casa Rita's a while back. Well, disregard that review because it's wonderful. We got take out the 1st time and I guess you have to go there to really experience it because it was delicious. Of course, there was a 35-40 min. wait, but what restaurant in Frisco isn't going to have that kind of wait on a Friday night at 7PM???


We went w/some of our dear friends: Leanne, Jeff, Cat, & Charlie. I wish I would've got pics. I'm so bad about taking pics. :( Anyway, we all pretty much got items off the menu that included their brisket. Apparently they're known for their brisket...which by the way, was off the chain. And we all had some rita's of course and they were perfect - just the right amount of tequila, mix, ice, salt, etc. After dinner we all came back to our place and chilled on the patio. The boys had scotch & cigars...gross and the ladies sipped on some "House Wine" which was pretty decent. Everyone left pretty early because we all had to get up early.


Saturday morning we got up early and got dressed and got loaded up to go to the Motocross track. This was the 1st time I was going in a looooonnngg time. I normally only go when Lindsey is racing, not practicing. But I promised him that I would go when he got his new bike and make some videos and take some pics. Well, we get out there and my phone goes dead. Go figure...my luck. But it was still neat to be there and watch him ride. Of course, Kinglsey and Pops were there too. For those of you that are into motorcycles...Pops rides a little Honda SL100...pretty sweet little bike. (The one pictured isn't his, but it's identical...found this one on the net)


Kingsley thinks it's his though. As soon as they unloaded and they got that thing on the ground Kingsley was patting on the seat saying, "Go go go go go..." He LOVES to ride motorcycles and he just turned 2 in January. So I'm kind of freaking out a little bit. Lindsey and Pops have already been searching for a bike for him! Scary! So they putt around the track on that thing all day while Lindsey rides. I sat in watched and got uber sun burnt. Ouch! I mean, it is just dirt piles out there - not a single tree. So NO shade. We were at The Pit MX out in Terrell. And while we were out riding on Saturday my little baby girl was getting her ears pierced. She's not really little anymore...she'll be 5 in July and she's starting school this August, which I can't freaking believe. Anyway, her Dad said she did really good and she didn't even cry! Well, there was just one little tear but that's it!


So that was Saturday and Sunday we normally go to church but since I was so freaking sun burnt the only thing that I could wear was a strapless dress and didn't really think that would be appropriate to wear to church, lol. So we got up and went and had breakfast at II Brothers Diner in Frisco at Preston & Stacy/Main...deelicious! And after that we decided it was time to buy E an helmet since he pretty much rides w/the boys every Saturday. We headed over to Cycle Gear in Plano and picked out a helmet and we even bought the hair to attach to it that looks like a mohawk. It was so cute. Of course, Elvis didn't want anything to do w/it. He WOULD not wear it. I tried to get a pic of him w/it on and he refused!


So that was our weekend in a nutshell. I'm pretty sure I'm probably leaving out some things here and there. Oh, I'm still shredding. Haven't missed a day yet! It's getting easier...thank goodness!

Officially a "Shread Head"

I started The Shred yesterday and holy cow am I sore today. How am I going to do it again and again for the next 30 days? The exercises seemed so simple and easy and you don't even do them for that long, but oh.my.gosh I was totally freaking worn out afterward and I almost couldn't keep up at the end. Totally disappointed in myself that I'm that out of shape. Or was it like that for everyone? Seriously I was sweating my butt off and I was shaky and eventually got a headache...maybe I didn't eat enough carbs beforehand or something (I've been on a no carb/low carb diet). Anyway, for all you shred heads out there... how long did you do level 1, level 2, & level 3... did you evenly divide them up w/in the 30 days and do each for 10 days? Just curious.
