Recipe

Boy am I sore today... I ended up Shredding last night and I was so proud of myself because I was able to get through the whole thing with out pausing! Go me! Anyway, made a good recipe last night that I wanted to share. It's Honey-Lime Red Snapper.


If you can't find Snapper, you can use any firm whitefish for this lovely marinated entree. You can also substitute regular lime juice for the key lime juice (I did).

3/4 cup key lime juice
1/2 honey
4 red snapper fillets (6 ounces each)
2 teaspoons chili powder

In a small bowl, combine lime juice and honey. Pour 1/2 cup into a large resealable plastic bag; add the fish. Seal bag and turn to coat; refrigerate for up to an hour. Place remaining mixture in a small saucepan; set aside.

Drain fish and discard marinade. Sprinkle fillets with chili powder; place on greased broiler pan.

Broil 4-6 in. from the heat for 12-15 minutes or until fish flakes easily with a fork (or you can pan fry or blacken them in a cast iron if you like). Meanwhile, bring reserved lime juice mixture to a boil. Reduce heat; simmer, uncovered, until reduced by half. Spoon over fish fillets.

Yield: 4 servings
Prep: 5 min. + marinating
Broil: 15 min.

Stats

Ugh... I totally don't want to post these. It's so embarrassing. But you gotta start somewhere. Anyway, I've decided to post my stats to see how I'm doing. I always work out and I'm never happy w/the results but to be honest I don't keep up w/anything...I just look in the mirror and if I'm happy, I'm happy and if I'm not, I'm not. And in return I always end up giving up b/c well, I'm never happy w/the results. So I thought maybe if I saw the numbers changing it would motivate me to keep going. I officially started working out today and my goal weight is around 135. The perfect weight for my height would be 132 according to my doc. I'm not doing any specific workouts or any specific diets. Just trying to be health conscious about what I eat and I'm going to stay active daily as far as working out. Today I ran 0.5 mile and I longboarded 1.0 mile and I'm probably going to Shred later on this evening. I'm giving myself until the end of this year to reach my goal weight... so wish me luck!

Valentine's Gifts

Got the coolest Valentine's gifts ever! Been a good lover, I guess. Just kidding. No but really... the hubs got me this awesome necklace from Etsy!



And I got the new Samsung Galaxy Tab. Unfortunately... the kids have already taken it over. I felt like it was Christmas today! :)

E's Haircut

E got a haircut last night too and believe me it was much, much needed. He did really good but I think that's b/c it was Kelsey and we were at home. He absolutely hates those kids hair cutting places and is soooo bad. I'm sure all his Bebe's and Grandma's will be happy now; they've been begging us to get his hair cut! :)

Damn you Superbowl & being sick...

I had a physical in the beginning of January and truth be told I need to lose about 30lbs to be at my ideal weight and I'm low in Vitamin D and my bad cholesterol was a little high (that's probably due to the fact that I'm the world's worst when it comes to fast food... I.AM.A.FAST.FOOD.JUNKY) but the doc did say that my good cholesterol was so high that they kind of balanced each other out. But I still need to watch my saturated fats and eat lots of Cheerios and Oatmeal. In the month of January I think I did pretty well. I lost 5lbs! I wasn't super physical but I did change my diet quite a bit. As far as exercises, really... all I've been doing is Longboarding and I changed my desk chair for a yoga ball and as far as my diet I took out fast food and cokes and sweets and any kind of processed foods and I incorporated a lot more fruits and veggies and lots and lots of water. Then February came along and ruined everything. Stupid February. I gained every pound I lost back. I blame it on the Superbowl and getting sick! Lol! I ate horrible for the Superbowl. And then I got sick and all I wanted was comfort food. :( I'm going to try and start posting some of the recipes I've made that are soooo yummy! Here's a few:

**Dominic Update**

Just wanted to give you guys an update on Dominic. Unfortunately he passed away at about 7pm this evening. God rest his precious little soul. He's in a much better place where he's healthy and now his parents get to go home and spend time and bond and get to know his brother. Dominic was a twin and his parents have been at this hospital w/him pretty much since day 1. So thank you guys for all your prayers and support.

HELP DOMINIC!

A friend of Lindsey's that he works with just had twins and one of the twins, Dominic, is fighting for his life right now. He was diagnosed with a Coarctation of the Aorta and Patent Ductus Arterious after catching just a common cold. He ended up having heart surgery and as a result of the surgery he had a seizure and contracted a viral infection. Upon dealing with all that the docs found that he has a smaller airway than normal; there had been previous issues w/incubation. He was then also diagnosed with complete tracheal rings and some tracheal stenosis so he had to have another big surgery but that was going to delayed in order for him to heal from his previous surgery. Dominic was sent home but things took a turn for the worse and he contracted yet another virus. The infection landed him back in the hospital with respiratory distress. At this point the decision was made to have his 2nd surgery, a Slide Treacheoplasty and in order for him to heal from this surgery he had to be paralyzed. Well he had the surgery but wasn't healing as fast and as well as everyone hoped; turns out he contracted MRSA staph. At this point it's a waiting game.
